A Finalist!!!


Giorgia is one of the TEN finalists for Delaware's Cutest Baby/Toddler!!! I'm excited and she was excited with the lollipop I gave her. lol. Please help her win and go vote at the link below!! It's out of the judges hands now so it's the votes that count. You can vote once a day online and once a day at the Christiana Mall. The only slight inconvenience is that you have to register...But it's easy, short and only have to do it once. She needs everyone to vote (pretty please) as much as you can. This is G just arriving at the mall and stunned by ALL the people! There must have been 300+ on that "short" list!!! lol

I decided against video taping the event because lets face it, there were 2,660 entries and they were all stinkin' cute. Last minute I decided what the heck and as soon as I pulled the camera out they revealed the first finalist...GIORGIA!! OMG, totally didn't capture THAT moment and G was like, "I NO GET OUT OF STROLLER", so we just kind of waved and they brought us a pin and an 8x10 of the photo that HUGE reveal photo!

I was now into bribery!

This is my favorite photo...the one above! I was trying to get her to pose infront of the photo below but she ran to the one above and said, "NO, THIS ONE". Okay, she's the boss!!

One (1) top winner will be featured as the cover model for the August issue of Delaware Moms magazine. First place will receive a $250 gift card to Christiana Mall. As many as you know, I'm pretty wordless on my blog. Ask me in person and holy cow...I've got too many words! lol. Those of you that know me.... know how true this is! lol
I do have friends that use their words wisely and I find that their words feel like they came straight from my heart. Funny how that works sometimes.

Mini Ham and Egg Cups

If you are the type that doesn't "do" recipes just consider using some of these ingredients...

Eggs, shredded low-fat sharp cheddar cheese, shredded Parmesan cheese, cottage cheese, frozen spinach, defrosted, water squeezed out and roughly chopped, roasted red peppers, diced, finely diced ham, canadian bacon, crumbled bacon, sliced green onions, kosher salt, black pepper, hot sauce, slices ham as cups

Preheat oven to 350

In a bowl, combine all ingredients (except ham slices) and stir well.
If using ham slices, spray muffin tin with non cook spray and place one piece of ham in each well to form a bowl.
Evenly divide egg mixture between the 12 muffin wells (about 1/4 C each), being careful to keep ingredients well dispersed. You want them to fill right up to the top.
Place in the oven and bake for 15-20 minutes. Bake them until they puff up nicely and are just barely set on top. Overcooked eggs are spongy and gross, so don't go crazy and let them cook too long. Eggs will sink after cooling.

As soon as they're cool enough to handle, pop them out of the tin and eat! Or you can let cool completely to room temp and freeze and just reheat one at a time in the microwave. Store leftovers in the fridge.
Store them in an airtight container in the fridge, or freeze them. When reheating in the microwave, make sure to take off the foil liner! And if you're reheating from frozen, I try to take them out the night before so they can thaw in the fridge. Then when you microwave them, set them on a folded paper towel to drain excess moisture.
Eat them alone, or for a well-rounded breakfast crumble on top of a piece of whole grain toast along with a glass of milk and a piece of fruit. Makes 12.

4 eggs
1 C egg substitute* or an additional 4 whole eggs
3/4 C shredded low-fat sharp cheddar cheese
1/4 C shredded Parmesan cheese
1/4 C cottage cheese
5 oz frozen spinach, defrosted, water squeezed out and roughly chopped
(that's half a standard frozen box of spinach)
1/3 C roasted red peppers, diced (jarred, or make your own)
1 oz finely diced ham, canadian bacon, or crumbled bacon (about 1/4-1/3 C)
1/4 C sliced green onions
1/4 t kosher salt
1/8 t black pepper1/2 t hot sauce
foil muffin tin liners OR 12 slices ham
